Pumpkin Muffins and the Beginning of Fall

When I woke up this morning, I realized that I had been dreaming about a pumpkin spice latte....I've got pumpkin fever. So, with that in mind, I figured today would be a perfect day to post my recipe for pumpkin muffins. They are yummy, healthy, and under 200 calories per muffin.
For this recipe, you will need:

*1 cup whole wheat flour
*1 cup all-purpose flour
*1 cup unsweetened applesauce
*1 & 3/4 cup brown sugar
*1 standard size can of pure pumpkin puree
*2 medium sized eggs
*2 teaspoons cinnamon
*1/4 teaspoon pumpkin pie spice



Its so easy. 
Preheat your oven to 350 and line a muffin tin with cupcake liners.

 While the oven is heating, mix all of the ingredients together in a large bowl. Evenly distribute the mixture into the cupcake liners.

Bake these muffins for 22-24 minutes (or until baked all the way through). Let them cool for about 10 minutes and then enjoy.



This recipe makes approximately 15 muffins and each muffin is around 190 calories. They aren't particularly low in sugar, but everything else about them is fairly healthy. These are some of the most moist muffins you'll ever have. They are pretty great. You can also add cocoa powder and chocolate chips for a more dessert-y muffin.
