Chocolate Cinnamon Bread

Thursday, December 18, 2014

Last week I was watching a Cupcake Wars "Marathon" on Netflix while I crocheted, and was suddenly overcome with the urge to bake. I don't even like baking, but all of a sudden, I needed to!

I went into the kitchen and scaled the cabinets until something sounded good: chocolate and cinnamon. I considered making cupcakes (in honor of my current marathon), but I'm really not a cupcake fan, so I decided to go for a dessert bread. Much more my style :)

After finding a basic bread starter recipe, I just threw things together in the bowl, but it ended up being one of the best desserts I've ever made. Seriously, this recipe is, in the words of Andy Dwyer (Parks and Rec, anyone?), "awesome-sauce"!

My Recipe:

* 1 C All-Purpose Flour

*.5 C Whole Wheat Flour

*.5 C Granulated Sugar

*1 C Brown Sugar

*1 Stick of Butter

*.5 tsp Baking Powder

*.5 tsp Baking Soda

*2 Eggs

* 1/3 Bar of Baker's Chocolate
(or .5 C chocolate chips)

* 1 Tbs Unsweetened Cocoa Powder

* 1 tsp salt

* 1.5 Tbs Cinnamon

(* Note: you can use 1.5 C all-purpose flour. You don't have to use two different kinds of flour)

Directions:
Pre-heat oven to 350 degrees.

Melt the baker's chocolate and butter in a small dish in the microwave.

Combine all ingredients (including the melted butter and chocolate) in a large bowl and mix until thoroughly combined.

Grease a bread pan with olive oil (or spray with cooking spray). Put mixture into bread pan.

Bake for 20-40 minutes. Mine took close to 40, but my oven is fairly slow. Keep an eye on the bread as it bakes, as all ovens cook at different speeds.

And finally, lick remaining batter out of bowl....this is the most important step ;)

Happy Baking!
